Yain is a must for cod-lovers, featuring an à la carte with “media-ración” options alongside many other cod-inspired dishes such as cod with sea urchin cream and seafood spaghetti; cod gratin with Jiloca saffron, tomatoes and orange confit; cod with cauliflower cream and fried pancetta; and grilled cod with curried lentils. This is complemented by two tasting menus (Esencia and Epicure) requiring advance booking, and one “executive” menu only available at lunchtime midweek.

The extensive à la carte, which basically revolves around two premium products, Balfegó tuna and Wagyu beef (the cattle are raised locally on the Mudéjar Wagyu farm), is supported by a tasting menu called Temático de Atún (through a variety of hot and cold dishes, you can discover the different types of cuts). Here they take great care in the staging!
