Sit at the counter of this simple raw bar and enjoy a warm welcome as he preps causas and ceviche. Expect a dozen or so dishes with no starters and no desserts. Each dish is freshly prepared with skill and knowledge while the flavors are clean and vibrant. A fine bowl of the tuna tataki rocoto, with its thick slices of cured red tuna, has a superb smoked flavor, and the Faroe salmon topped with a lovely cilantro salsa is outstanding.
