"The Auvergne I want you to meet is the one we encounter and pick every morning in our mountains, meadows and forests." The words of local lad Xavier Beaudiment are far from platitudes. Le Pré celebrates the quintessence of its region through cuisine that is both instinctive and poetic. Frog’s legs, pike, foie gras and rabbit are lovingly and enthusiastically crafted and paired with some 200 plants and wild herbs picked at the foot of the volcanoes or in the establishment’s own herb garden. All of which is washed down with a knock-out wine list.
WebsiteNothing remains of the ruined château, except its founding spirit, which has been given a new lease of life thanks to the vision of two local childhood friends. It is now home to guestrooms, a bar and a restaurant housed in the tasteful timber extension. The Colombian chef crafts authentic cuisine packed in flavour and scattered with South American notes (ceviche of fish of the day, flame-licked cooking). In line with their eco-responsible ethos, priority is given to local producers, and some of their vegetables, herbs and even fish also come from their own aquaponics greenhouse, hence the one
WebsiteFrom the upper reaches of town, this attractive hotel dating from the 1930s broadcasts a non-stop resounding tribute to the electro-magnetic waves and the triode vacuum tube that made the invention of the talkies and the wireless possible. Its Art Deco decor has lost none of its splendour – mosaic flooring, decorative wrought iron and a marriage of glass and mirrors. In the kitchen, chef Wilfrid Chaplain mixes influences from his native Normandy and his adopted Auvergne, drawing out their gentle, little-explored harmonies. Technically proficient, he creates ambitious, subtle and delicate cuisi
WebsiteRather than a summons to a hearing, this restaurant near the courthouse extends an invitation to foodies! Jean-Claude Leclerc has been running this popular Clermont-Ferrand restaurant for over two decades. The chef delivers his balanced and assured take on seasonal classical cuisine in an elegant contemporary setting. The dishes are unapologetically indulgent, as illustrated by the beef tournedos with Périgueux sauce and melt-in-the-mouth potatoes with Cantal cheese, or the sea bass with gently braised savoy cabbage and black truffle.
WebsiteThis former 19C coaching inn sports a plush interior. It is the haunt of chef Géraldine Laubrières, who adds a consummate modern spin to patriotic French classics: loin of Atlantic cod with a shellfish emulsion, beef cheeks in gentian, wild boar in red wine… The desserts are equally dazzling, particularly the soufflé, the flavour of which changes with the seasons. Seamless service, sensible prices and a splendid wine list.
WebsiteThis restaurant occupies a converted mill built out of black volcanic stone with a slate roof. Set just outside a village, it overlooks a pretty lake, beside which the terrace is laid in fine weather. The interior is the epitome of snug with a stone fireplace, a bar and mismatched furniture. The chef signs recipes tailored to modern tastes using local produce (even the coffee and cocoa is roasted locally) to which he adds a well-travelled spin: trout jazzed up with a chimichurri sauce or veal that resembles couscous… Beautiful plating and talented craftsmanship. Platter of regional cheeses.
WebsiteThis gem of a bistro, which fully lives up to its name, is established in a country town known for its ties to former French president, Giscard d’Estaing. Chef Sylvain Revelant (stints with Édouard Loubet and Hélène Darroze, among others) concocts the kind of hearty fare that always goes down a treat. Predominantly local ingredients set the scene in crisp, fragrant dishes, e.g. asparagus and pine buds; croaker, wild mushrooms and a shellfish emulsion. A friendly, easy-going vibe and cheerful service.
Not far from Le Mont-Dore, authenticity is guaranteed in this inn, where the dining area was originally a cowshed! Fresh ingredients and copious portions of tasty traditional cuisine, such as tender pork cheeks, home-made potato purÉe and Saint-PourÇain white wine sauce… even if the chef allows himself a few incursions into more contemporary territory, with dishes such as salmon gravlax.
