Live lobster, which can be seen in tanks as you enter, is prepared different ways ranging from a familiar pasta dish to a Thai-inspired recipe. Brasserie classics such as filet américain with fries and vol-au-vent are reworked to suit a contemporary palate without losing their original DNA.
