Quentin and Hermance Joplet are at the helm of this family business in a refurbished house, whose open kitchen backs onto a splendid terrace, which, in turn, commands a knockout view over the valley and the walled village of Fayence. The food is steeped in the colours and flavours of Provence and inspired by the market and the seasons, with dishes such as fillet of Mediterranean meagre, panisse and seasonal vegetables, or fig tart, almond cream and red berry sorbet.
