Not only is her creative modern cuisine entirely vegan, but it also draws on fascinating Moroccan and Mexican influences. The dishes are straightforward and unfussy; here, it is all about flavour and soul. The chef – born in Spain and the daughter of Moroccan immigrants – grew up on the Costa Brava.
