Be it for a quick lunch or a more leisurely dinner, chef Doucet’s modern approach always hits the spot. He avows a weakness for crisp, legible, contrasting flavours. For example, he may add an exuberant edge to lightly poached Atlantic cod courtesy of lemon zest and a subtly smoky mushroom stock. Doucet leaves his heroic, distinctive stamp on each dish thanks to sensitive nuances.
