In this mountainous area on the edge of the Basque Country, this traditional establishment is simply charming. It is also the repository of a family history going back four generations. Ximun has now taken up the mantle, serving delicious traditional cuisine, characterised by generous portions and tasty well-matured broths and jus. The ingredients are local, and the suppliers are duly listed on the menu. This is comforting fare (think duck raviolo, mix of mushrooms, langoustine bisque; "Axuria" lamb: pressed lamb, macaroni gratin, Xipister, lamb jus), to enjoy in the bright, somewhat rustic-st

It is well worth visiting this mountain village to eat at this restaurant occupying a typical “chesa”-style house with an impressive old vine adorning the façade. Enjoy a drink in the public bar before heading upstairs to the attractive rustic-contemporary dining room featuring bright dining spaces, a minimum of furniture and impressive lighting. Here, owner-chef Alfredo García, showcases a traditionally inspired menu brought impressively up to date that always tries to champion seasonal and locally sourced ingredients. Canteré’s food-themed events are also highly popular, one of which is devo

A great gastronomic experience? Here, given that the gourmet option is concentrated around three exclusive tables, you can enjoy it if you book well in advance; perhaps unsurprisingly, this captivating restaurant is located in the emblematic Canfranc Station (now a luxurious Royal Hideaway Hotel), inside an old carriage capable of transporting you back in time. The experience, which begins with historical details on the platform and includes a stop for aperitifs in the 1928 carriage-restaurant (offering a more French-style cuisine - in the evenings, run by the same team), is accompanied by a c

The last thing you expect in an old stone mansion such as this, which has witnessed the passing through of pilgrims heading to Santiago de Compostela along the Way of St James over the centuries, is innovative cuisine that is well worth a break in your journey. Its interior is both rustic and contemporary in style, with two separate sections: the informal dining space at the entrance (Origen restaurant), where the only option is an affordable traditional menu, and the more refined gourmet dining room upstairs (with just three tables) where you can eat while watching the chefs at work. After spending almost 15 years in Chile, Michel Moutroustéguy and his partner decided to return to the chef’s homeland. In the peaceful Basque countryside, they orchestrate a concise, sensibly priced score in a market-fresh vein, as well as an inspired new take on traditional Basque classics. The chef seeks to highlight local seasonal produce, sometimes cooked over embers as he demonstrates his know-how picked up all over the world: sauces and jus that pack a punch, consummate craftsmanship and high-flying seasonings. From starter to dessert, everything is spot on!

Located on the ground floor of an old stone building (the same one that houses the two-Michelin-star El Molino de UrdÁniz), Origen showcases the cooking of award-winning chef David Yárnoz, albeit in a much more informal and relaxed format. Directly accessed from the street, it features a rustic-contemporary dining room, bare wood tables and a fixed-price menu (where you choose a starter, main course and dessert), including dishes such as the delicious glazed and baked organic trout with pickled beetroot and parsnips, that adopts a contemporary take on traditional and regional dishes. Arnaud Chilo and his sister Marina embody the fourth generation at the helm of this family inn established back in 1937. They brought a breeze of change, illustrated by new furniture and a reappointed dining room, which has happily retained its comforting rustic character, without forgetting the splendid view over the lush valley and the mountains from the terrace. The delicately updated cuisine is liberally sprinkled in fine Basque produce and keeps pace with the seasons: smoked trout; baked pollock in a crust; 7-hour slow-roasted shoulder of lamb…

An institution in St Jean Pied de Port, passed down from father to son. Both the decor and the cuisine pay homage to the classicism and taste of the Basque country, all of which with good quality produce.
