Not far from the Cirque de Navacelles, in a small village on the southern edge of the limestone plateau that is the Causse du Larzac, Pricillia Lebon's restaurant is housed in a converted inn. Beneath the stone vaults, the inviting, cosy decor reflects the endearing personality of a chef who has come to this beautiful, isolated setting to cook. The surprise set menu celebrates the Larzac area, with ingredients sourced mainly via short supply chains (not least from local market gardens), as well as from mushroom and plant picking. In a narrow pedestrian street of Millau, near the Fontaine du Mandarins, the dinky Maison Seed is the lair of a globe-trotting couple. A vaulted dining room provides the backdrop to indulgent, fusion-style dishes that incorporate oils, vinegars, sourdough bread, etc, all made in-house, and available to take home. An intimate, eco-conscious restaurant that combines flavours from near and far.

This well-oiled machine on the banks of the River Orb, now home to two brothers – one a sommelier, the other a chef, was a cloth mill in a former life. Inside, granite and wood dominate the decor, while a glazed wine cellar stands in the centre as a reminder of the pivotal role played by wine here. It's no secret: when the food is good, it's a real hit! The cuisine is delicious and oscillates between traditional brasserie dishes (fillet of beef, knife-cut steak tartare, roast loin of veal etc) and Mediterranean touches such as pasta risotto with baby squid, chorizo and a shellfish jus. Ortensia means hydrangea in Occitan and this is how it is spelt in the local lingo! Run by a sister-brother team, Lise and Mathieu, this restaurant is in a picturesque village miles from anywhere. The veteran chef is equally at home with gnocchi in gorgonzola and lobster as with duck from Landes, croaker from Corsica or apricots from Provence. Only the veggies and aromatic herbs are local, like mimosa-style celtuce (stem lettuce) from Pezènes-les-Mines and poutargue (fish roe). A small medieval village. Tucked away from view, a 12C tower casts a shadow onto a stone wall, and behind this wall you come across this charming inn, which is certainly worth getting to know! Here they serve good traditional food that is at one with the monastic atmosphere of the place, all vaulted ceilings and stone walls.
