Suinsom

regional · ★ Michelin

€€€€

In Ladin, Suinsom means “at the top” and this is a name that alludes not only to the position but also to the summit of a sophisticated gastronomic journey. In two welcoming stube clad in light-coloured wood, guests discover gourmet cuisine with a polished Mediterranean accent, enriched by international influences. In addition to dishes that honour the chef's Tuscan roots, the menu features recipes with a distinctly Mediterranean flavour, such as the delicate citrus-infused yellowtail sashimi with caviar and dandelion, or the lobster with Jerusalem artichoke cream, foie gras and caviar beurre

This is the gourmet restaurant at the hotel of the same name, one of the most luxurious in the Val Gardena. The elegant, contemporary dining room has an intimate and minimalist feel, which provides the backdrop for cuisine created by chef Mario Porcelli. Although originally from Puglia, Porcelli has been working in the Dolomites for many years and he is equally at home with local dishes as he is with recipes from his native region. He offers three tasting menus (Tradizione in evoluzione, Omaggio alle Dolomiti, and the vegetarian Terra), from which dishes can also be chosen à la carte style. A

Nives

Since December 2023, there has been a new chef at Nives who appeared on Masterchef and has left his work as a project manager to follow his passion for cooking. His cuisine is generous both in the choice of dishes offered (including a few fish options) and in portion sizes. The house specialities include convivial fondues (either Chinese style or made with local cheese) and premium local beef (Tomahawk, T-bone, ribeye, sliced etc). There’s also an interesting choice of wine by the glass.

In a breathtakingly beautiful natural setting between the Sassolungo peak and the majestic Sella mountains, this restaurant serves simple mountain fare alongside a few more modern dishes, all of which are prepared from typical ingredients from the Alto Adige. Although you can’t book at lunchtime, bookings are required in the evening. Beautiful guestrooms are also available.
