Kaido Sushi Bar
Japanese · ★ Michelin
€€€€
A contemporary Japanese restaurant which despite its compact size, has plenty of personality. It only has space for ten guests who have to arrive in unison, then sit together around the bar to appreciate the gastronomic experience to the full, including the explanations and studied movements of renowned sushi chef Yoshikazu Yanome. His philosophy is built around the Edomae Sushi tradition (established during the Edo period from 1603-1868) of preparing the (at the time abundant) fresh fish and seafood caught daily in the waters of Tokyo bay. The same idea permeates the cuisine here, which nowada

Fraula is located just a few metres from the Mercado de Colón, a market that is a listed national monument and one of the best examples of local Modernist architecture from the early 20C. This minimalist-contemporary restaurant is both visually impressive and welcoming, and takes its name from the Valencian world for “strawberry”. Roseta Félix and Daniel Malavía, the two chefs at the helm here, enjoy creating a bond with their guests, hence their alternating appearances in the dining room. They offer three contemporary-style menus (Cebera, available at lunchtime from Tuesday to Friday, and two

A German chef who considers himself Valencian at heart is at the helm of this restaurant where he constantly reinvents the food on offer. Globe-trotting chef Bernd Knöller has moved onto an important stage in his career which sees him interacting with his natural surroundings. This has led to him making a name for himself on the local food scene through his occasionally anarchic and always liberated vision of creative Mediterranean cuisine. From his kitchen, open to the dining room and surrounded by a bar that allows us to watch him work, he champions a fixed-price à la carte (three dishes of

A superb example of how perseverance, effort and solid values in the face of fresh challenges helps you to grow professionally. This restaurant, occupying an impressive mansion in the city’s Ruzafa district that has been decorated with plenty of charm and personality, stands out for its different dining options. In addition to the main dining room upstairs, it also boasts a pretty garden, two attractive tables in front of the kitchen and a particularly pleasant terrace where guests can enjoy aperitifs, a meal or a relaxing post-dinner drink. This centrally located restaurant, formerly known as El Poblet, changed its name and took a new direction under the leadership of chef Carolina Álvarez, a native of Mexico, who spent six years working as the right-hand woman of award-winning chef Quique Dacosta at his iconic three-star restaurant. In their own words, Flores Raras ‘shares the creative DNA and gastronomic rigour of the three-Michelin-starred Quique Dacosta Restaurant in Dénia’.Here, their elaborate contemporary offering, built on technical mastery, aesthetic sensitivity and a close relationship with the product, revolves around

Only a stone's throw from the Ruzafa market, this restaurant is renowned for its fresh take on day-to-day tastes that will come as a pleasant surprise. The hard-working chefs at the helm, continue to grow as professionals (they head up the Tándem Gastronómico consultancy service) and have created a concept for this restaurant that allows them to experience gastronomy responsibly and freely, fusing the roots of their native Argentina with various culinary details from Spain and Italy from a very personal perspective. Here, everything revolves around two tasting menus (Los Años and 10 Años de Fi

Accessed via the door of an elegant building, Lienzo boasts a renovated, contemporary feel that fully respects the name of the restaurant (“canvas” in English) thanks to its appearance dominated by white tones and striking notes of colour provided by paintings by Valencian artists. Murcia-born chef María José Martínez, who is also known as the “honey chef” and is always ably supported by her husband Juanjo Soria in the dining room, creates modern Mediterranean cuisine with no little creativity that showcases and fully respects seasonal Valencian ingredients from its market gardens, mountains a

You’ll soon realise that this is a typical “taberna” but with a difference – something that they are keen to emphasise on the windows of the front door. This eatery, with a bar at the entrance and a simply furnished dining room to the rear, is run by Javier Vega and Blanca Martínez, two cooks (and a couple) who have previously worked in prestigious restaurants such as DSTAgE (Madrid). Their cuisine is centred around taste memories from the past which aims to pay loyal homage to classic bar and “tasca” dishes, while at the same time reinterpreting these from a more contemporary gastronomic pers
