The smaller of two restaurants inside the Hotel New Skanpol in the centre of this Baltic Sea coastal town, Sublima is open throughout the day, with the offer stepping up a gear in the evening. Polish ingredients, classical French technique and subtle international flavours combine in dishes bursting with colour and flavour.
