Select ingredients, for the most part sourced in the region, make up the raw material used in the open kitchen to create dishes such as "Biberwier salmon trout (marinated & flambéed), Granny Smith, beetroot, buttermilk, chives" or "crispy fried guinea fowl breast, chanterelles, green asparagus, polenta, broccoli".
