This delightful village is famous for its “Cocido Maragato”, a dish that for centuries has, against convention, been served here in reverse order (first the meat, then the chickpeas, followed by the soup at the end). At Coscolo, the special feature of this legendary recipe is that it is prepared with products that are smoked, cured and prepared on the property using ingredients sourced from the local area.
