Organic is the watchword here, from the mindfully sourced produce used in the kitchen to the furnishings chosen for the restaurant and hotel of the same name – the latter were crafted by local artisans from untreated natural materials. Many of the ingredients are grown in the on-site garden; fermented and pickled foods are also used. Here, the cooking has been taken back to basics, with the focus placed squarely on the first-rate regional produce. The cuisine of Felix Messner – who runs the restaurant together with his brother Florian – is inspired by Austria and Vorarlberg. The simplicity of the fresh, flavourful dishes (eg breaded fried chicken, potato salad, pumpkin seed oil) is in keeping with the decor in this timber building on the village square, which was erected in 1756 and renovated according to historical models.
