For many years now, Christine Heß and Michael Laus have been delivering on their appealing "soul food" concept at their restaurant right next to Auerbach town hall. He demonstrates a knack for creative cuisine, injecting modern touches, for example, in "Ibérico pork dim sum, butternut squash, green papaya, edamame, snow peas, spring onions, Thai curry" – an exceptionally flavoursome combination that harmoniously balances acidity and heat.
