In the kitchen, Riccardo Berto sprinkles his colourful Mediterranean dishes with Peruvian touches, informed by his experience as chef at L'Altiplano in Val d'Isère. One example would be the amberjack ceviche enhanced by an invigorating leche de tigre with peach and crispy corn. A truly enjoyable experience.
