Tatau
Creative, Traditional Cuisine · ★ Michelin
€€€
This gastro-bar with a difference will definitely take you by surprise! It is the project of a couple (Tonino and Arantxa) who have always focused on the personality of their cuisine without being afraid to incorporate influences from elsewhere. The name Tatau connects with the charisma of Tonino and his tattoos, a chef who says that the different stages in his life history have left a “mark” and are represented through his culinary creativity. The restaurant, which features fun pin-up details, focuses its offering on a single 12-course tasting menu, called Du Jour. We especially liked two dish

Lillas Pastia
Modern Cuisine, Farm to table · ★ Michelin

This iconic restaurant, just behind the historic Casino de Huesca, has taken a new direction, although it retains its culinary essence and continues to be known as the ‘Casa de la Trufa' (Truffle House). The establishment, with a carefully designed contemporary aesthetic, has an exclusive reserved area dedicated to truffles (for 10 diners) and the gastronomic restaurant as such, with a semi-visible kitchen and on one of its walls, created using Artificial Intelligence, a large illustration of a woman singing opera (hence the name Lillas Pastia, from the tavern depicted in the famous opera Carm

La Era de los Nogales

Located in a tiny village in the Alto Gállego region of Huesca province where its glass marquee-style design amid typical stone buildings comes as something of a surprise with the stunning backdrop of the Aragonese Pyrenees and its magical sunsets as a bonus! Here, chef Toño Rodríguez conjures up contemporary yet traditionally based cuisine that impresses with its high quality and flavour and a focus on local, seasonal ingredients with a nod to the classic dishes of the region (the appetisers, enjoyed at a small bar, are a tribute to the three provinces of Aragón) as well as those from his chi

El Origen
Traditional Cuisine · Bib

El Origen’s main dining room is dominated by an unusual mural that recalls the history of the square on which it is located, which is affectionately known as “Los Tocinos” (literally “bacon”) because of the pig fair that used to take place here. Owner-chef Beatriz Allué creates traditional cuisine with a contemporary touch both in terms of preparation and presentation, with a clear preference for organic produce from Aragón. Her father, a farmer, supplies her directly with many of these, thus ensuring maximum freshness. Choose between a good-value daily menu and two others (Aragonés and Degust

Canteré

It is well worth visiting this mountain village to eat at this restaurant occupying a typical “chesa”-style house with an impressive old vine adorning the façade. Enjoy a drink in the public bar before heading upstairs to the attractive rustic-contemporary dining room featuring bright dining spaces, a minimum of furniture and impressive lighting. Here, owner-chef Alfredo García, showcases a traditionally inspired menu brought impressively up to date that always tries to champion seasonal and locally sourced ingredients. Canteré’s food-themed events are also highly popular, one of which is devo

La Cuchara de Ruba
Traditional Cuisine · Bib

In this small Pyrenean town, everyone is talking about La Cuchara de Ruba, a restaurant with the sole aim of perpetuating the legacy of Ramón Ruba, a leading name in the local hospitality sector. It could be viewed as the younger sibling of Vidocq (in Formigal, part of the Sallent de Gállego municipality), as chef Diego Herrero has brought his own cuisine here while respecting, to a certain extent, the essence of the erstwhile Casa Ruba. In the simple dining room, with its highly informal service, the menu (which changes almost every day) is contemporary in style and based around recipes from

Las Torres
Contemporary, Traditional Cuisine
€€
A classic-cum-contemporary restaurant with a profusion of wood that has been in business for over 30 years, and which takes its name from the area in which it is situated, known affectionately as “the three towers”. Its à la carte of traditional cuisine with a contemporary touch always features top-quality ingredients and is complemented by a tasting menu.

Gratal
Modern Cuisine
€€
While this restaurant may seem simple, behind the stove is David Fernández, a chef who, after working in large restaurants, decided to return to his origins to forge his own identity. The small à la carte, organised as if it were different routes through the Cinco Villas region or Aragon itself, is complemented by a good daily menu (some dishes have a supplement) and a tasting menu. You can find interesting signature courses, as the chef has won several tapas competitions and even participated in Madrid Fusion!
