Chirón

Modern Cuisine · ★ Michelin

We’re not just paying lip service when we say that Chirón is one of the best places to eat on the outskirts of Madrid, just 25km from the Spanish capital. Here, chef Iván Muñoz, working alongside his sommelier brother Raúl, showcases the cooking of the Madrid region from a more modern and creative perspective, while at the same time paying homage to its traditional roots. Choose between highly enticing set menus with a touch of influence from La Mancha, which take us on a journey along the banks of the Tajo, Jarama and Tajuña rivers. The chef’s enthusiasm for the area and its local produce does

Under the term ‘ether’, derived from the Greek word for 'sky' or ‘firmament’, this restaurant gives physical form to the dream of the Tofé brothers, Sergio and Mario, who share the load, the former as chef and the latter as maitre d' and sommelier. The unassuming premises, just a few minutes' walk from Plaza de Legazpi, is intimate and minimalist, decorated with paintings by different artists. They favour a contemporary cuisine that is not devoid of personality, with interesting Latin American influences (especially from Mexico and Colombia) that speak to their experiences with chefs from the

This restaurant, situated halfway between the Estación Sur de Autobuses bus station and the Enrique Tierno Galván park, enthuses guests with its penchant for the historically inspired cooking of the city of Madrid. Chef Álex García de la Fuente has rediscovered and revived the city’s most historic recipes, bringing them up to date with his own personality. The à la carte, which features a section dedicated to tapas-style “bocados”, includes several dishes designed for sharing (the bocadillo de calamares with a citrus alioli – this is Madrid, after all!; the slightly spicy red prawns from Huelv

This is indeed the same premises where chef Javier Estévez first opened what was to become the highly successful La Tasquería (the latter is now located in Calle Modesto Lafuente). It has retained the same look and bistro feel with a small kitchen overlooking the dining room, and offers guests cooking that is similar to that of the original La Tasquería but with a more informal menu of popular dishes. Of course, you’ll find tapas, raciones and dishes that feature its trademark offal (casquería in Spanish), plus a whole host of other non-related dishes. Don’t miss out on classics such as the tr

La Montería

With its location just a few steps from the Retiro, this restaurant is usually full every day and is well worth considering if you find yourself close to this stunning park. With a history dating back over a half a century, this family-run business has had a facelift and now features a more contemporary bar plus a Nordic-inspired dining room. The culinary theme remains the same, however: honest cooking on an extensive à la carte that always features a game dish, plus excellent set menus (Clásico and Degustación). The prawns in batter dish is one of the most popular on the menu here.

Casa de Pías

Traditional Cuisine

A centrally located restaurant with a classic-contemporary decor dominated by a white colour scheme in its main dining rooms and private spaces. Here, the emphasis is on traditionally inspired cooking that makes full use of farm and market produce, alongside dishes prepared with superb fish direct from the coast (such as braised wild grouper) and top-quality meats (Iberian pork cheek with a yellow curry sauce, grilled Galician T-bone etc). The wide selection of appetisers is complemented by a choice of traditional preserves.

Jaizkibel

Basque

€€

In this restaurant located in a residential district of the city, the undisputed stars of the show are the ingredients (such as bonito tuna to which a special section of the menu is devoted in season) and flavour. The extensive à la carte of traditional Basque cooking, including an array of rice and cod dishes and stews, is complemented by a tasting menu. One standout dish that we particularly enjoyed was the “cogote de merluza” – simply cooked and delicious neck of hake drizzled with garlic and parsley oil.

A good dining option close to the Retiro, just a few metres from the Puerta del Niño Jesús entrance gate to the park. This quiet, attractive eatery, a fusion between a restaurant and a tapas bar, offers a contemporary focused à la carte of tapas and small plates with an Andalucian influence, plus two tasting menus (LQDW Short and Long), the unusual names of which (LQDW or Lo Que Diga Willy translates as What Willy Says) are a nod to the owner-chef here. The unusual “gilda” (a type of tapa) of olive, anchovy and piparra pepper is a must here.
