Les Prés d'Eugénie - Michel Guérard
Classic Cuisine · ★★★ Michelin
€€€€
Some chefs owe their reputation as much to their cuisine as to their human qualities: Michel Guérard, who died in August 2024, was one of them. Considered one of the founding fathers of "la nouvelle cuisine", admired by his peers the world over, he always put the same passion and dedication into his work, leaving his kitchen teams and family an incomparable gastronomic heritage. At Les Prés d'Eugénie, you get the full experience: the enchanting setting of a gorgeous mansion set in the verdant grounds, a front-of-house team with laser-like attention to the smallest of details… and, above all, c

L'Orangerie
Classic Cuisine · ★ Michelin
€€€€
Comfortably installed in what used to be the fine dining restaurant, L'Orangerie is a real treat, indulging diners with an array of options. The most emblematic dishes and recipes of the father of nouvelle cuisine, the late Michel Guérard, are present and correct. Alternatively, you can get your teeth into fine cuts of meat from the Landes département (Blonde d'Aquitaine and Bazadaise beef, local poultry etc) cooked over an open fire. Finally, there are starters that combine classics and brasserie dishes (house-smoked salmon, horseradish cream and toast; avocado "cocktail" and large Palamós pr

Solid oak tables, custom-made tableware and a warm welcome… This snug restaurant is the domain of Manuel Godet, who harnesses his impeccable technical skills to craft creative dishes that shine a spotlight on local produce, sometimes with original flavour combinations. Examples include braised pork cheeks with Madiran wine and orange zest, served with textures of pear and purple sweet potato mousseline and finished with a rich, concentrated jus. Simple lunch deal, more ambitious fare in the evening.

La Table de Jean-Paul Tossens - Monastère de Saint-Mont
Modern Cuisine
€€€
To say this place is steeped in history is an understatement: the monastery, rebuilt several times since the Middle Ages, is said to stand on the site of a Roman oppidum. The chef revisits French cuisine through a seasonal lens, showcasing premium ingredients, and serving up his dishes in an elegant setting. Guestrooms available; hotel facilities include swimming pool and spa.

Le Florida
Traditional Cuisine
€€€
While regional delicacies remain firm fixtures on the menu of this welcoming traditional establishment (in business since the 1930s), a few discreet nods to the Mexican roots of the new owner have found their way into the culinary score. Examples include crispy crackling chicharron appetisers or a smoked, spicy tomato sauce that adds a kick to a starter of thinly sliced carpaccio of stuffed duck neck, apples and mayonnaise made from Gascony mustard. Healthful, fresh, throbbing with flavour and top-drawer quality. On sunny days, the shaded alfresco patio is blissful.

La Grande Salle

Revamped from top to toe, this city-centre institution is still going strong under the aegis of a family team, namely three brothers – one in the dining room (an MOF), one in the kitchen and one is a pastry chef! The culinary lineup aims to highlight the gastronomic heritage of the Gers region: raw and cooked scallops; Bigorre black pork and leeks; duck and foie gras pie, sliced at the table; baked Alaska, flambéed in front of you! Foodies with an appetite will be delighted to learn that the sauce boats are left on the table – irresistible with the house made bread! Simpler fare at Le 9ème bra

This contemporary bistro is near the Arsenal, a neighbourhood in the throes of renovation. The couple at the helm includes a chef with a wealth of Michelin-star experience and Laura, a former nurse who has retrained as a maître d' and sommelier. Succulent cuisine in the zeitgeist: beef tartare, smoked potatoes, trout roe and beurre noisette; confit hake, fregola sarda, burnt leeks and cashew notes... The chef takes a savvy approach to cooking, especially when it comes to the bargain-priced lunchtime menu (which changes weekly). The wine list stars wines from independent winegrowers. Bookings e

Le Petit Gourmand

Near the city centre, this vintage bistro is now the lair of Mathieu Espagnacq, who has taken over from his father, who opened the establishment back in the eighties. Mathieu, a seasoned chef with stints in Paris working with top chefs under his belt, crafts food in the zeitgeist that respects tradition and stars premium country produce (farm-reared pork cheeks braised in red wine, vegetables confit in thyme and gnocchi in a smoky cream sauce). A treat for your tastebuds from start to finish – remember to book!
