There's a wonderfully rustic feel to this relaxed restaurant where the buzz of contented diners bounces off the exposed brick walls and fills the room, right up to the vaulted ceiling. The cooking is unpretentious and accessible, with the chef excelling in taking less glamorous cuts and adding the right accompaniments to produce original dishes that are packed with flavour – like slow-cooked pork cheeks with smoked black pudding, creamed parsnip and apple ketchup. The friendly, infectiously joyful service really adds to the experience.

After extending into the next-door premises, this sister restaurant to The Courthouse in Carrickmacross remains a very likeable modern bistro, with marble-topped tables and a convivial atmosphere. Start with one of their snacks – the fried corn ribs with sriracha sauce are lip-smackingly good – before sharing a few of the larger plates, all of which are carefully prepared and full of flavour. Irish producers are name-checked on the menu, but don't be surprised to find international influences in the flavours, such as in the Korean fried chicken.
