Burnt Bean Co.

In the town of Seguin, people start to queue long before doors even open. It’s always been this way for pitmasters Ernest Servantes and Dave Kirkland, both of whom were dueling fixtures and frequent victors at countless barbecue competitions before joining forces in 2021. The industrial space fit with iron beams and exposed brick has seemingly endless seating that does indeed fill up. Everyone is after the same thing: The offered meats – brisket, ribs, sausage – are notable for their tenderness, delicate smokiness, and measured levels of fat. Barbs B Q
Barbecue, American · Bib
$$
Barbs B Q is run by pitmaster Chuck Charnichart and her small team. Waiting in line for good barbecue is a Texas tradition, and this place, with its hours-long lines is no exception. You'll need to stave off your cravings until the weekend though, as it's only open on Saturday and Sunday. The Lockhart gem's compact menu lists a handful of meats that read classic but have been given a twist, as in the Molotov pork ribs finished with lime zest, giving the tender meat just the right amount of zing. Turkey with a black pepper rub is a total standout, and don't miss the unique sides like green spag

LeRoy and Lewis Barbecue
Barbecue, American · ★ Michelin
$$
LeRoy and Lewis BBQ began as a food truck in 2017 and has since moved into a spacious Garrison Park location. Run by a duo of married couples, the restaurant has a casual, midcentury-inspired feel, with its glazed brick exterior and open, peaked dining area. The menu expands on traditional barbecue, offering a wide range of smoked meats alongside tacos, sandwiches and daily specials, particularly after 5 p.m. While the kitchen explores a variety of cuts and preparations, the approach remains rooted in barbecue, with an emphasis on bold flavors and generous portions. la Barbecue
Barbecue · ★ Michelin

la Barbecue was founded by the late LeAnn Mueller and is now run by her wife, Ali Clem. The large, custom-built pit in the backyard anchors the operation, while the interior is a simple space brightened by bold colors and a country-leaning soundtrack. Lines can build during peak hours, as guests wait to order a range of smoked meats at the counter. Brisket remains a central offering, alongside house-made sausages and pork or beef ribs. Sides and accompaniments, including slaws and pickled items, add some spiciness and contrast to the richness of the meats.

Hestia
American, Contemporary · ★ Michelin
$$$$
Push past the glass door of this restaurant in the heart of downtown and you'll immediately get the drift—quite literally, as wood smoke perfumes the air. This hot spot is all about live fire cooking, as evidenced by the 20-foot hearth in the open kitchen. Contemporary cooking is on display in both the à la carte and chef's tasting menu, and Texas produce and proteins take center stage. From savory to sweet, nearly everything is kissed by the flames or scented with smoke. "Embered" cantaloupe with green tomato and shiso blossoms is an elegant opener; and hearth-dried and blistered tomatoes ove

Nicōsi
Creative · ★ Michelin
$$$$
Saving room for dessert isn't necessary at Nicōsi because this daring tasting menu celebrates the final course exclusively from start to finish. Nestled inside a dark, moody space hung with velvet curtains off Pullman Market, this theatrical experience is a true surprise, as there is a strict no photo or phones policy for all guests at the L-shaped counter. The multicourse meal tends to follow four themes—acidic, umami, bitter and sweet—and the team rarely repeats dishes from one season to the next. The creations are edgy and imaginative. Isidore
American, Steakhouse · ★ Michelin
$$$$
Located in San Antonio's historic Pearl District, Isidore is a stylish spot with a midcentury modern feel complete with an open kitchen and live-fire hearth. Named for the patron saint of farmers and laborers, there is a clear focus on Texas ingredients and local traditions, even incorporating Native American elements into the bread service. The menu is large, with items intended for sharing and a section dedicated to steak. Narrowing down your snack selection isn't easy, but the popcorn chicken, crispy fried with popcorn aioli and velouté, is a good bet. Cherokee tomato in a house-made kombuc

With its white clapboard and black shutters, Olamaie, named for the chef's grandmother, mother and daughter, is a charming spot north of downtown Austin. Consider a cocktail, as their list is interesting and includes a daily punch and fun drinks like the Spaghetti Western martini with Texas olive-oil-washed gin, vodka, cherry tomato-infused dry vermouth and basil eau de vie.Expect Southern cuisine that's been given a contemporary polish, and don't dare miss out on the buttermilk biscuit, served warm and accompanied by whipped honey butter sprinkled with sea salt.
