Lounge music in the background, colourful butterfly and flower decorations and the warmth of Limburg’s hospitality: a meal at Magnific is always a treat. All the more so, as the chef savvily mixes French and Italian scores, throwing in the odd Asian twist. Examples range from a mandarin and wasabi-laced salmon tataki to tournedos Rossini or lobster with tagliatelle and tomato sauce. Whatever the dish, you can rely on the chef’s stellar craftsmanship and grasp of full-bodied flavours to come up trumps every time! La Source is fully the equal to the swanky, elegant La Butte aux Bois, a five-star Michelin key holder, in which it is housed. In addition to a weakness for outstanding ingredients, chef Ralph Hermans’ score unveils a scattering of exotic notes, spot-on cooking techniques and a modern-day ethos. He may pair Challans duck magret, cooked medium rare, with a subtle five spice sauce, ponzu jelly and sautéed girolles. The final flourish to this outstanding fine dining experience comes in the shape of the impossibly enticing sweet titbits that are served with coffee.

The food features a pageant of polished French fare with the occasional Italian twist, illustrated by terrine of foie gras or venison in a Grand Veneur sauce. At the front, Onglet is a butcher shop selling delicious meat products during the day; but in the evening, the cold store door opens, and diners are welcomed into a trendy restaurant with nostalgic decor reminiscent of a butchery of yesteryear. In the fully open kitchen, chef Alan and his team craft a tasting menu that marries familiar flavours with creative flair. Haricot is a venture started by three friends. Having worked together at De Librije, they have now set up shop in the heart of Maastricht. In a cosy wood-panelled restaurant with a French feel, diners are served a single set menu in which the chefs demonstrate their mastery of the art of omission. Their dishes are accessible but incorporate contrasts and vibrant twists. Our inspectors were particularly taken with the pearly white skrei ballotine with sautéed and marinated oyster mushroom and deep-fried kale, finished with a spicy beurre blanc emulsion for added character. Once a traditional café, this place is now a no-nonsense bistro, complete with upbeat background music. Bar Beurre certainly lives up to its name. Just like in traditional French cooking, butter (beurre) is a key ingredient here, but this cuisine is not at all lacking in sophistication. For example, the chef uses it to prepare megrim à la meunière, which he serves with anchovies, broad beans and an exquisite beurre blanc finished with a dash of sherry. The short menu features dishes that are bold and playful. Le beurre, c'est la vie!
