This elegant restaurant, complete with a terrace commanding a knockout panoramic view of the mountains and valley, is located in the recently refurbished Villars Palace. The ambitious, structured cuisine combines regional and Mediterranean dishes in four- or six-course set menus. The creativity of the "Gambero Rosso", for example, a carpaccio of red prawns contrasted with a perfectly presented dill sorbet, is a case in point.
