This family-run restaurant, with its heavy emphasis on produce from the vegetable gardens around Aranjuez, is home to an unusual “Atelier” downstairs (with an open-view kitchen behind the counter and which is often full of customers enjoying tapas) and an attractive dining room with exposed wood beams upstairs. The à la carte, which is heavily focused on the superb vegetables from the market gardens around the town, is split into different sections: 100% “green”; 60% “green” - 40% “animal”; 80% “animal” - 20% “green”; and 100% “green” and “dairy”. A single tasting menu is also available.
