Thomas Merkle runs this long-established family business with his wife, upholding a tradition of refined hospitality in the picturesque Old Town. The Endingen-born chef expresses his attachment to the region through his use of outstanding local produce, though his cosmopolitan outlook shines through in his choice of international ingredients.
