Antoine Dacquin and Pierre Bleuzé, Lille-born chefs and partners here, first became friends in the kitchens at Bloempot, Florent Layden's restaurant. During service, one of the pair oversees the restaurant floor, the other cooks. Through their surprise menus, at lunchtime and in the evening, they are making waves with dishes cooked up using quality farm produce – seasonal, of course!
