Situated in these premises since 2015, Fausto has become a local favourite thanks to the quality and style of its cuisine which combines classic flavours and regional influences. Two of the chef’s great passions (chocolate and ice cream) always feature on the dessert menu, while the cool outdoor space near the entrance adds to the appeal.

Inspired by the famous film Bitter Rice, directed by Giuseppe De Santis, who was born in Fondi, this restaurant welcomes guests into elegant dining rooms and a lush courtyard which is perfect for summer evenings. The cuisine looks to the present with a well-balanced creative flair that is evident in dishes such as the cuttlefish lasagnetta, served with an intense creamy sauce made from cuttlefish ink and offal, or the intriguing sweet “pinzimonio”, a fresh and light dessert that combines sweet-and-sour vegetables with softer notes.
