Essenza is housed within the Borghi dell'Eremo resort in a stunning setting surrounded by beautiful and tranquil natural landscapes. The spacious dining room, which is flooded with natural light thanks to the picture windows that look out at the Umbrian hills, provides the backdrop for a culinary experience that focuses on traditional cuisine. Our inspector particularly recommends the exquisite Borghi saffron tagliatelle served with a rabbit ragù (the rabbits are raised on the estate’s own farm).

In the historic center of this charming village above the lake, this spot is a great place to explore Umbrian cuisine, particularly traditional dishes featuring freshwater fish. For example? The oven-roasted medallion of porchetta-style carp, which offers a rich and succulent flavor!

Shelves stacked with wine bottles line the walls at this smart bistro-style restaurant, which also boasts a quiet outdoor space for summer dining. The cuisine is contemporary and creative and is showcased on three tasting menus from which dishes can also be ordered à la carte. We highly recommend the pink shrimp, broad beans, lovage and almond dish – one of the chef’s iconic specialties. Courses here are divided into meat, fish and vegetable sections (Terra, Acqua and Vegetale).

Housed within an ancient mill in the village of Chiugiana, a small hamlet of Corciano, the osteria offers contemporary cuisine deeply rooted in the local area. Ingredients are carefully selected, and the wine list tells the stories of small producers, both local and national, with a special focus on artisanal and natural wines.

This complex, which also includes two junior suites and seven guestrooms, dates back to the early 17C and was commissioned by the Church as a stopping off point for travellers on their way to Rome. For many years now, the restaurant has been run by a Venetian family with twin brothers (both highly experienced) working in the kitchen and a third brother, a sommelier, at the helm in the dining room. The cuisine is inspired by local and Venetian traditions, with a modern approach to the combinations of flavours (including home-grown herbs) and to the presentation of its delicious, generous dishes
