The smaller of two restaurants inside the Hotel New Skanpol in the centre of this Baltic Sea coastal town, Sublima is open throughout the day, with the offer stepping up a gear in the evening. Polish ingredients, classical French technique and subtle international flavours combine in dishes bursting with colour and flavour. The kitchen’s skill with fish cookery is particularly notable, as evidenced by terrific skrei cod with green asparagus, butter sauce and trout roe.
