The menu changes daily thanks to a constant supply of seasonal ingredients, freshly sourced directly from the region. The result is dishes prepared with his own signature style, refined with aromatic herbs from the immediate vicinity and presented in a pleasingly minimalist way. The chef's Austrian origins also shine through time and again in the 10- or 12-course set menu. The
