French, Mediterranean Cuisine · ★ Michelin

In the centre of the peaceful village of Ballaigues, near the French-Swiss border, this restaurant is housed in a magnificent edifice, dripping in history. At the helm are two virtuoso French chefs, David Sauvignet and Damien Lanza, who share a passion for good food. Their ambitious take on seasonal Gallic fare is delicate, strewn with subtle Mediterranean influences and crafted with outstanding, mostly local produce. Examples: Mieral pigeon, crispy potato pavé, confit of shallots and green peas; fillets of John Dory, sorrel-laced concentrate of tomato, fried artichokes. Meals are served in a

In the heart of Yverdon-les-Bains, the GERBER WYSS establishment is a fine dining eatery, a bakery-chocolaterie and a tearoom. The former’s distinctive style is founded on cryoconcentration, fermentation, fresh herbs and vegetables, in a bid to enhance Swiss produce. This virtuoso, veggie-centric technique is packed in emotion, precision and visual appeal. The eight-course Signature Menu immerses you in this universe with dishes such as poultry oyster meat, fermented shiitake water and Suchy hazelnuts. The terrace is perfect for an aperitif before dinner or snacks. A warm interior and stylish,

Table de Mary
Classic French · ★ Michelin

Since 2007, Maryline and Loïc Nozahic have been at the helm of this establishment in the upper reaches of Lake Neuchâtel, just a stone’s throw from Yverdon-les-Bains. A striking modern building with a flower-decked terrace and the Jura mountains on the horizon set the scene for a deftly crafted classical Gallic repertory, sprinkled with up-to-the-minute notes. Their four-course signature menu stars spot-on, legible cuisine made with premium produce: langoustine cooked at 62°C, serac cheese in bergamot-laced shortcrust pastry, salsa of line-caught hake, loin of veal stuffed with olives, upside-

Restaurant de l'Hôtel de Ville
Classic French, Seasonal Cuisine · ★★★ Michelin

This restaurant, known simply as "Crissier" by its regulars, boasts a star-studded history. The success of the restaurant, which was first awarded three stars in the 1994 MICHELIN Guide, began with Frédy Girardet and was continued by Philippe Rochat, Benoît Violier … and now Franck Giovannini. At the head of an impressive kitchen team, the latter continues to roll out Gallic classics of exemplary clarity, rich in big-boned, yet balanced flavours. Lamb in herbs, strikingly fresh red mullet, Nantes duck in a gutsy gravy: the quality of the produce is as outstanding as the consummate cooking. Eac

This aptly named establishment (a warm welcome does await!) is an excellent option in the heart of the Haut-Doubs. For four generations, this inviting and comfortable chalet that is typical of the region has been practising the art of Jura-style hospitality. St Point Lake is across the road, Le Suchet mountain and Switzerland just beyond. Here, they put their heart and soul into providing good food that is an ode to the region. Chef Marc Faivre worked at Georges Blanc, Pierre Gagnaire and Maison Lameloise before returning to his homeland, where his fine and tasty cuisine delights diners: trout

On the top floor of "La Fabrique", the swish modern 1424 restaurant commands a knockout view over the Vaud Alps. In addition to a tasty lunchtime menu, in the evening you have a choice between three leisurely 3- to 6-course menus that slalom between regional produce and international twists: cappuccino of squash, venison with cèpes and pears poached in red wine. The monthly brunch is a hit with foodies. Friendly, on-the-ball service, generous helpings and spot-on, expressive cuisine. Located in a former Cistercian monastery dating back to 1442, this restaurant concocts a score tailored to today’s tastebuds. The menus draw heavily on local organic produce sourced from within a radius of 100km. In the evening, let yourself be tempted by a five- or seven-course menu, whose modern recipes have been devised with sustainability in mind and an eye on food-wine pairings.
