Young chef Martina Caruso was born and raised at Signum, and after gaining formative experience elsewhere, decided to return home to personally take charge of the kitchen. Today she leads a brigade of nine, while her brother Luca manages the enchanting hotel built in the style of a typical Aeolian village. Martina knows how to make the best use of the vibrant products from her land, her garden, and the sea; she doesn’t deny their power, skillfully playing – with lightness and creativity – even with the intense salinity of certain ingredients, not masking it but enhancing it. Fish plays the starring role here, where the authentic traditional flavours and ingredients of Aeolian cuisine are skilfully interpreted with a touch of imaginative flair. If it’s not too hot to sit outside, ask for a table on the pleasant, shaded terrace on the first floor.

Arrive at the restaurant before sunset to admire a spectacular view of the Aeolian Islands: the setting is breathtaking, and the extraordinary “plant-based” cuisine, as defined by Chef Davide Guidara refusing the stereotypes of “vegetarian” or “vegan”, is sure to move you even further. From his open-view kitchen, a single surprise tasting menu is offered (price included), conceived as a journey through numerous often playful tastings. Guidara, previously awarded as a Young Chef, shows great skill in highlighting the winter produce from his garden through preservation techniques such as ferment

The kitchen here reaches a standard of absolute distinction. The two tasting menus, one more concise, one more extensive, present a proposition built upon the full and recognisable flavours of fresh, predominantly local produce, handled with solid technical skill within a contemporary Mediterranean idiom. Cultured references are not lacking, such as the measured use of French-inspired sauces or the judicious application of fermentation, lending depth without heaviness. The dessert chapter is a true final indulgence: after a first tasting served at table, the experience continues at a dedicated

Overlooking the piazza for almost 50 years, this restaurant has been modernised but has nonetheless managed to retain its friendly ambience, especially in the outdoor space facing the narrow alleyway. The owner-chef serves regional specialities reinterpreted with his own individual twist, such as his famous swordfish rolls served in a type of pie.

Opened in 1910, this historic restaurant with an attractive shaded outdoor pergola serves an extensive array of delicious local fish prepared in traditional recipes. Enjoy a selection of typical Sicilian specialities prepared by the Bernardi family, including the highly recommended “Nonno Filippino” fish soup.
