Occupying an attractively fronted old mansion that was once a small hotel, this converted property now features a cocktail bar, a wine cellar, and several contemporary-style dining rooms that were once the former guestrooms. he kitchen is in the hands of the very young and very talented Colombian chef Aris Pabón, who has created a contemporary tasting menu (4 or 8 courses) full of original ideas, technique and personality. • Brutal This centrally located restaurant draws attention to itself right from the outset thanks to the designer decor of large branches on the façade, a theme repeated on the ceilings of its meticulously appointed interior. At the helm in the kitchen you’ll find chef Evelin Vargas, who promises an experience that is 'wild and primitive' (as an example, guests are encouraged to eat a huge rib of beef with their fingers, hence the provision of gloves and a bib!). In this case, the honour goes to Francis Mallmann, an Argentinian chef who was keen to develop the concept after an eye-opening trip to the Napa Valley in California. This restaurant, located at the Escorihuela Gascón bodega in the department of Godoy Cruz, which was founded in 1884, hence the reference in its name, and features a contemporary dining room, a bar space and a pleasant terrace, where you’ll find the grill, the wood store and the roasting oven.
