Occupying an old house in the town centre, this restaurant is strongly influenced by the character and ideas of owner-chef Riccardo Bosco, who offers an original mix of traditional Trento cuisine and influences from around the world, including Korean kimchi and Japanese cooking methods such as tataki. A prime example of the latter is one of the restaurant’s signature dishes, namely trout with celeriac purée. Daily specials based on what’s available at the market also feature, while regional wines are to the fore on the wine list.

The creak of the ancient wooden floor welcomes you to this seventeenth-century mill, where chef-owner Alessandro Gilmozzi – an authentic alpine guide of gastronomy – conveys his deep passion for the territory. On the table, freshly executed smoking techniques, an extraordinary use of local herbs, barks, lichens, and resins are combined with rare cheeses, intensely flavored game, and freshwater fish, all interpreted with creativity and distinctive cooking methods. Three tasting menus are now offered: one of four courses, the other two of eight. The wine list features appealing labels, also avai

Daniele and Elisa are a couple of young restaurateurs who are familiar to us from their time at Blumenstube in Sant'Orsola. Having moved on, they have now opened their own restaurant in Pergine, where both the decor and the cuisine are contemporary-Alpine in style. As in currently in vogue, their dishes are showcased on three tasting menus (short, medium and long) from which dishes can also be chosen à la carte style. All the recipes have a creative feel, demonstrating the chef’s playful approach to his contemporary ingredients.

This intimate and romantic restaurant occupies an old 19C farmhouse situated in a tiny hamlet in the Cembra valley. In the softly-lit dining rooms, chef Mara Fronza serves just one tasting menu which changes every month (guests have the choice of the main menu or a shorter version if they prefer) and showcases Italian dishes with obvious regional influences, especially in the seasonal ingredients used, all prepared with a modern twist. The famous carbonara is reinterpreted with the addition of anchovies and Crusco peppers, while the dark chocolate dessert with cherries in rum and cardamom-infu

This romantic inn with guestrooms occupies an old farm with a hay barn. In two typical Stube-style rooms, one of which offers views of the Cembra valley, enjoy cuisine prepared by a mother-and-son team. They work side by side, preparing dishes from mainly regional ingredients (the menu often includes the names of producers) each in their own individual way, which is highlighted on the menu: to the left, you’ll find the traditional dishes made by the mother, Sara, while on the right you can choose from a selection of modern, creative options prepared by young chef Mathias. In the center of Cavalese, within the hotel of the same name, a young chef presents an intelligent and delicious reinterpretation of Trentino gastronomic traditions without distorting their identity. A stop not to be missed, complemented by a solid wine selection featuring several organic, biodynamic, and amphora-aged bottles. Essential is the Schüttelbrot gelato with black bilberry, wild spinach, and thyme.
