The sensibly priced patriotic lineup stars a succulent list of dishes that reveals a genuine eye for detail and a fine bouquet of flavours, e.g. crunchy pig’s trotters, purée of granny smith apples and caramelised walnuts, or flame-licked mackerel flanked by watercress soup and squid ink-laced shortbread. In this modern, spruce little restaurant located next to the Comédie La Rochelle theatre, the cuisine is the handiwork of a motivated young couple who met at Alexandre Mazzia. The pair's trademark is creative, colourful cuisine, each dish coming with three satellite-style variations, such as hake with peas and cabbage, accompanied by lentils with a haddock emulsion and a seaweed blini with home-made taramasalata on the side. Bistronomy-style formule menu at lunchtime; for dinner, their fine dining tasting menus, which change every four months or so, comprise different numbers of "sequences".
