This lovely mill built of local stone and flagstone stands in a bucolic setting on the banks of a river. The restaurant has exposed rafters and large picture windows. Having worked in the restaurants of Pierre Gagnaire, Michel Bras and Alain Ducasse, Émilie and Thomas Roussey, both chefs, have swapped their premises with those of Hervé Busset, who is now based in the heart of Rodez. At the foot of this gorgeous village, known for its abbey church and Pierre Soulages's stained-glass windows, Moulin de Cambelong is home to this bistronomy restaurant, a friendly and down-to-earth alternative to Émilie and Thomas's MICHELIN-starred restaurant. Tuck into indulgent cuisine: tomato gazpacho, mussels and vierge vinaigrette; pulled pork with sorrel sauce.

The sophisticated decor features blown-glass lights reminiscent of the grapes of Marcillac, the rapidly expandi

What a pretty village clinging to a cliff and famous for its cooling waterfall! What a pleasant, convivial place, with its warm, colourful bistro decor, lovely old wooden floorboards, counter and arty posters on the walls (and let's not forget the terrace overlooking the courtyard in front of the town hall). In the kitchen, chef Marine Guichou cooks up a feast, using carefully selected local produce, which she skilfully prepares in a fresh, authentic bistro style. And with her almond pannacotta and chocolate mousse on a cocoa crumble, she has created the quintessential dessert for anyone with
