  • Grand Hôtel du Lion d'Or★ Michelin Marie-Christine and Didier Clément have successfully enhanced Sologne’s pastoral universe in their historic regional gourmet landmark thanks to some fabulous restoration work. The Offard house was entrusted with creating an incredible natural, ‘rural’ interior out of “stone cardboard”, an 18C handicraft about which chef Didier Clément is passionate. The food embodies a gourmet interpretation of the countryside, courtesy of the chef’s research into forgotten herbs and spices: grains of paradise, sand leek, angelica and lemon thyme.   • Le Bois Blanc Chambord asparagus and Sologne strawberries, freshwater fish like pike, catfish and carp, game in season: chef Maxime Valleye, with stints at Georges Blanc and in his parents’ establishment, sings an ode to his region. Even the restaurant’s name, which is evocative of a birch tree, is in tune with Sologne’s forests. Maxime carefully crafts seasonal dishes steeped in classical overtones: pork, confit of egg yolk, spinach and goat’s cheese crumble.   • Le Bruadan Jean-Charles Boulmier and Christelle Cauli (formerly of L'Épicurien) are clearly passionate about nature. Named in homage to the forest bordering the village where they have set up shop, their appealing modern restaurant has a decor with plenty of wooden features and a palette of green, as if better to evoke the region of Sologne. The chef, who has an impressive track record (L'Espérance with Marc Meneau, Le Grand Coeur in Méribel, La Villa in Calvi), follows the seasons closely with his mouth-watering dishes: fish mousse, mussels and pig's trotter; pork filet mignon, polenta and corn.
