(The restaurant is temporarily closed.) The celebrity chef of Frantzén fame has opened his third Asian venture in this shophouse. Diners are offered an aperitif and amuse-bouche on the first floor, before the eight-course neo-Nordic, seafood-slanted tasting menu with Japanese influences unfolds on the second floor. The onion course is a tour de force whose flavours are intensified by contrasting textures and temperatures. The non-alcoholic drink pairing sees eccentric combos that nonetheless work.

This restaurant in an ultra-luxury beach resort boasts a rustic chic room, complete with an open kitchen, wood-fired oven (hence the name) and a terrace overlooking the pool and garden. Here, the chef offers a good range of Italian classics, embodying his personal history and childhood memories. His tiramisu, generous enough for two to share, is topped with a crispy caramelised sugar shell, a perfect finale to the refined dining experience.

Candles in wine bottles and tables made from wine barrels are among the details that set the authentic small bistro scene here. Wine connoisseurs will be bowled over by the wine cellar and knowledgeable servers, who know every vintage inside out. Classic French recipes are made with local ingredients to cater to the local palate. Many dishes are meant to share, making this lively spot a great place for get-togethers.

Araya

Chilean chefs Araya and Guerrero worked at the same restaurant in China. Their ingenious creations – deeply influenced by Araya's time in Spain and Japan – use an eclectic mix of Chilean and Japanese produce, with a South Pacific theme. Japanese favourites such as kinki and cod milt are jazzed up by aji amarillo and merkén from Chile, served alongside French pigeon and caviar. They even ferment and roast their own cacao to use in sauces.

Sourcing the finest ingredients is something of an obsession for Kyoto-born Kazuhiro Hamamoto. It's not just his nigiri, whether nodoguro or chutoro, that show his careful craftsmanship – the preceding dishes, such as the uni or smoked tuna course, prove just as memorable. Fish is paired with sushi rice dressed in either red or rice vinegar to accentuate its natural flavours. There is just one sitting at lunch and one at dinner, so book well ahead.

Clever lighting, dark wood and shades of red lend this modern Chinese restaurant a slick, stylish feel. Amidst traditional recipes, novel dishes also feature on the menu. Either way, the food is always meticulously plated. Don’t miss the fish bone and fish maw soup, double-boiled with chicken and pork for six hours. Chilli crab served in a casserole boasts firm, flavoursome meat. Order deep-fried buns to mop up the knockout sauce.
