In his kitchen in the restaurant of the time-honoured Victoria Jungfrau Grand Hotel, Stefan Beer uses only ingredients sourced within a 50km radius (the clue is in the name!). There are two set menus – conventional and vegan – plus a "Sommelier Menu" with wines from the surrounding area.
