Chef Vítor Adão, from Trás-os-Montes, has roots firmly anchored in tradition and the provenance of his produce. After stints at renowned restaurants, he opened his own place in a less touristy area, showcasing the heritage of his homeland in dishes such as snacks served on a map referencing the different Trás-os-Montes regions and Javali, wild boar, with cauliflower purée, cooking juices and blackberries.
