They aim for a home-from-home vibe and welcome guests like old friends: “Maurice is like coming home” in their own words. The sommelier can be relied on to ply you with insightful tips, whilst the veteran chef masterfully deploys his classical training to craft knockout dishes and sauces, albeit with the occasional more modern twist. For example, he often slips in Asian notes, illustrated by a ballotine of langoustine underscored by a sublime yuzu and dashi sauce.
