Inside, Masayoshi Hanada (formerly at Sushi B) builds a single omakase menu around exceptional fish – Mediterranean bluefin tuna, Auvergne trout, catch from Brittany – absolutely masterfully cut and prepared. Affording a view of the chef and his assistants meticulously going about their tasks, the superb solid hinoki (Japanese cypress) counter seats just 10 guests.
