The chef takes great care with the presentation of her plates and uses carefully sourced ingredients to deliver precise and flavourful dishes: langoustine bisque spiced with citrus and a fiery aioli; trout prepared two ways, with a sorrel cream sauce; chocolate mousse dusted with fleur de sel and drizzled with fruity olive oil.
