Time seems to have stopped still at Bleuet, which is confirmed by the view over the rolling hillsides of the Flemish Ardennes from the exquisite terrace and the cosy interior of this cosy cottage. Pieter-Jan is in the kitchen, while Yoran makes sure the dining room never gets too crowded to ensure optimum quality. Yoran can be relied upon to open a bottle of wine for you to taste, which is something of a rarity these days. The chef plays with familiar flavours and international accents, as his seabass fillets in a miso and champagne sauce with a risotto of wheat and crunchy veg demonstrates. F
