On the main road to Brive-la-Gaillarde, you are bound to notice this Corrèze-style building with its characteristic local stone walls and slate roof. You will immediately feel at home inside, thanks to the soothing decor (wooden floors, oak tables, leather- and fabric-upholstered seating) and the beaming smile of the laid-back chef. He cooks by instinct, devising blind menus out of locally sourced ingredients. His delicious dishes, such as Limousin veal belly, smoked beetroot, carrot ketchup and mashed parsnips, lack neither colour nor precision.

In this country house that is typical of the area, chef Nicolas Laval, himself a local man (from Corrèze), has opted for a pared-back contemporary interior decor in a palette of light wood, blue and white, in a nod to the maritime world he so loves. Examples of his dishes include shredded beef cheek, parsnip mousseline, red wine reduction, tarragon; line-caught hake, cauliflower, orange gremolata, grapefruit, citrus vinaigrette. Born and bred in nearby Brive, the chef is an advocate of hearty traditional cuisine, in which local ingredients abound: fried egg, crispy bacon and new-potato galette; calf's head with ravigote sauce; free-range guinea fowl with carrots; moist walnut cake with crème anglaise. This converted mill on the banks of the Vézère (the old cogs can still be seen beneath the glass floor in the entrance hall) has been renovated and transformed into a contemporary bistro.
