You can watch the two chefs in the open kitchen as they prepare a six-course surprise menu. You need to allow plenty of time for this dining experience, but the 3.5hrs are absolutely worth it: the dishes are made with regional ingredients, and great emphasis is placed on seasonality and provenance.
