Located in the heart of Rome, beside the Spanish Steps, the Hotel de la Ville is a dynamic new space housed within a beautifully transformed 18th-century palazzo. The hotel offers 89 rooms and 15 suites, including two presidential suites with panoramic terraces overlooking the Eternal City. Guests can enjoy six innovative dining and beverage options, showcasing authentic Roman experiences with a fresh, elegant approach, under the direction of Maestro Fulvio Pierangelini. Among the most sophisticated and daring kitchens in the capital, Orma Roma stands today as a benchmark for signature fusion cuisine. Here, exotic ingredients and culinary traditions from Latin America, Asia, and the Mediterranean – including Sardinia, homeland of the chef’s wife – interweave in surprising creations, such as the unforgettable “Fregula, sea urchin, and XOrma sauce” sampled during our last visit. A restaurant of solid tradition, born in the early 1990s from the vision of three brothers from the Marche region – Angelo, Giuseppe, and Massimo: the first at the stoves, the others in the dining room. Over time, this establishment has become a benchmark in Roman dining thanks to a cuisine of strong authorial character, presented through two elaborate tasting menus – one entirely dedicated to the vegetable world. These menus can be adapted in length and are structured by seasonal rhythms and a constant dialog with Italy’s gastronomic roots. Iconic dishes are available to complement the experi
