Cheval Blanc by Peter Knogl

Classic French · ★★★ Michelin

€€€€

The name Peter Knogl goes hand in hand with French haute cuisine, which he produces here in the flagship restaurant of the over-300-year-old Grand Hotel Les Trois Rois. His cooking takes the form of extremely harmonious, mature and skilfully reduced creations that showcase his very own signature style. Well-defined flavours, subtle contrasts, perfect craftsmanship, no compromising on the quality of his ingredients… A case in point is the fantastic wild sea bass covered with finely spiced, crispy fried chorizo brunoise, served on a bed of subtly sweet julienned cucumber and accompanied by an el

Housed in a lovingly restored and converted printing house that dates back centuries, this chic and tastefully designed restaurant is run with dedication by Eveline and Roland Tischhauser. Duc Tan Arrigoni now calls the shots in the kitchen, and you can look forward to sampling the Italian-born chef's take on the restaurant's modern, Mediterranean cuisine concept. The set menu is accompanied by wine pairings from an extensive selection that includes an impressive choice of champagnes. The stylish bar area is perfect for an aperitif or nightcap. There is also a pretty terrace in the courtyard.

If you're not careful, you might end up walking right past the narrow façade of this mid-terrace restaurant. This charming, lively little establishment is right at home here in Basel's St Johanns-Vorstadt district. Both the slick interior and chef-patron Matthieu Judenne's seasonally inspired cuisine are modern, but for all their creativity they remain pleasingly accessible and ingredient-driven. The focus is undisputedly on flavour – soul food rather than frills is the order of the day here. This ethos is evident in dishes such as "poached egg, pea tartare, tarragon foam" and "octopus, Kalama

This venue calls to mind a culinary school courtesy of its purebred Gallic menu (ballotine of duck foie gras, beef fillet, Mirabelle plums flambéed in armagnac) and starched table service. Tradition and classicism reign all ‘around the table’.

Set up in what was formerly the gardener's house on a historical country estate, this is the trendy restaurant-bar concept of the Düster and Schneider restaurateur and winemaking families. Christoph Düster's cuisine is made up of what could be described as "modernised classics". The premium quality of the ingredients is evident in dishes such as "pizokel (buckwheat dumplings), Périgord truffle, spinach, hazelnut" or "guinea fowl, sherry, parsley root, Andengold potato". The atmosphere is pleasingly laid-back and casual, not least thanks to the easy-going, attentive and ever-present service und

This place exudes brasserie appeal thanks to its charming, stylish atmosphere and unfussy, honest seasonal menu, which also includes classic dishes. Despite its proximity to the centre, the location is pleasantly quiet – outside, an attractive terrace with shady trees beckons. There are well-kept guestrooms for overnight stays. Tip: Take the opportunity to visit Basel Historical Museum opposite.

What was once a traditional Swiss pub is now a relaxed, urban restaurant serving vegetarian cuisine with a focus on plates for sharing. In the evening, the "Kleines Menü" comprises 12 dishes in five courses and a "Grosses Menü" made up of 15 dishes organised into seven courses – ideal for sharing! Superb dishes such as the "beetroot variation with red cabbage and miso" or "pulled mushroom, spring onions and sweet potato" ensure that even non-vegetarians won't miss meat or fish. At lunchtime, the restaurant serves a condensed version of the evening menu, dubbed "Dinner for Lunch", alongside the

This pretty restaurant in the red-light district has a rather original concept that is popular with diners: in an open kitchen, the chefs conjure up ambitious appetiser-sized dishes that draw inspiration from modern culinary trends – three are recommended, then maybe a dessert to round things off. Great bar.
