In a location opposite the Palacio de Congresos de Castilla y León that is relatively easy to find despite being away from the city’s main tourist haunts, Víctor Gutiérrez, a chef who admits to having a 'Spanish soul and a Peruvian heart', showcases cuisine based around three strong principles: ingredients, technique and feeling. Now, ably supported in the kitchen by his daughters (Paula as head chef and Andrea as maître d'), he offers a fairly limited à la carte service and a single tasting menu called Raíces (14 courses) which reveal his full passion and an unquestionable splash of creativit

Are you searching for authentic Douro cuisine? Within the luxurious boutique hotel Torel Quinta da Vacaria (one MICHELIN Key), linked to a wine estate whose origins date back to 1616, you can discover it through the hands of the award-winning chef Vítor Matos. Behind the name Schistó, a play on words referencing one of the region’s best-known stones (schist), you will find a modern restaurant with an open kitchen and surrounding tables, allowing you to follow the chefs’ work at all times as they interact with diners while serving the dishes and offering explanations. If the prospect of a short food-themed country break appeals to you, this restaurant in the north of Cáceres province is the perfect destination. It is rare to find refined cuisine of this level in such a small rural village, so Versátil will definitely come as a pleasant surprise, hence our recommendation to book ahead. Fronting the project is Alejandro Hernández, alongside his brothers Jesús David and José Luis who are in charge of the dining room. Alejandro worked under the renowned Martín Berasategui, where he acquired the culinary skills that he now showcases in this eclectic yet welcomin

A modern gastro-bar with the soul of a restaurant located just a few metres from the city’s iconic Plaza Mayor. At Bambú, the open kitchen, traditional cuisine and grilled dishes reinterpreted from a more contemporary perspective are the main highlights, although you’ll also find hints of fusion and strong flavours from other parts of the world. Choose between tapas, half-plates and dishes designed for sharing, alongside an interesting tasting menu. Dishes we can recommend include the classic truffled duck egg, the highly original chicken chilli doughnut, the braised avocado with pipirrana, an

Considered to be one of the most beautiful pueblos in Spain, Mogarraz is a medieval village nestled in the heart of the Parque Natural de Las Batuecas-Sierra de Francia. Here, the Mirasierra restaurant, which has been in business for over five decades and boasts an exterior in perfect harmony with the buildings around it, is a good option in which to recharge your batteries. Here, you can choose between the traditionally inspired à la carte (on which the stews and roasted and grilled dishes stand out) and a tasting menu option. Enjoy stunning views from the rear dining room.

A family-run restaurant with a modern exterior and welcoming dining rooms featuring a mix of wood and cement that has been taking orders in the Salamanca countryside for over half a century. In the kitchen, the focus is very much on traditional dishes that are strongly based around local ingredients, including vegetables from its own market garden. On the menu, you’ll also find delicious stews and roasts, constant references to Iberian pork, plus a good selection of fresh fish of the day priced by weight. Traditionally caught red tuna is a favourite, hence the themed days organised here every
